Chipotle Chickpea Burritos & Homemade Guacamole

Inexpensive.
Ingredients (For Chipotle Chickpeas)
2 Tbsp of olive oil
2 x cans of 400g Chickpeas (Drained & Rinsed).
4 x Tbsp of Tamari Sauce (or soy sauce).
1 x Tsps Chipotle Chili Powder.
2 x Tsps Garlic Powder.
Tortillas of choice.
Method (For Chipotle Chickpeas)
Add olive oil to a pan on high heat.
Add Chickpeas and cook until slightly golden.
Add Tamari (or Soy sauce), Chipotle Chili Powder and Garlic Powder.
Sauté for 3-4 minutes until golden brown
Homemade Guacamole

Ingredients (For Guacamole)
½ cup of finely chopped onion.
4 Avocados.
2 Tbsp fresh Lime or Lemon Juice.
1 large Tomato (deseeded and diced).
¼ cup Coriander (optional).
½ Tsps ground Cumin.
Pinch of salt to Taste.
Method (For Guacamole)
Add diced onion to a small bowl and cover with warm water – set aside.
Cut Avocados in half and scoop out the seed and add the flesh to a bowl.
Add Lime juice, Tomato, Cilantro, Cumin and onions to the bowl.
Mash until creamy but still chunky.
Assemble your Burrito
Finally Warm tortilla in microwave for 20 seconds, add Chickpeas, Spinach and Guacamole.
