Chunky Vegetable & Leek Stew

Ingredients
1/3 Cup of Vegetable Stock
2 Medium Leeks - Cut into Chunks
4 Large Potato’s - Cut into Cubes
3 Medium Carrots - Cut into Chunks
1 Green Capsicum - Cut into thick Slices
1 Onion - Diced
3 Gloves of Garlic - Minced
1 head of Bok Choy - Roughly Chopped
1tbs Salt
1tbs Pepper
Spring Onion - Sliced
Sprinkle of Chilli Powder (Optional)
2 Litres of Vegetable Stock (Store brought or home-made)
Method
Heat Vegetable Stock in a large Pot at high heat
Add onion and garlic and add to the pot and cook for 4 minutes
Add Leek, Potato, Carrot, capsicum and add to the pot
Add the Salt and Pepper
Pour in the Vegetable Stock
Sprinkle in Chilli Powder (optional)
Bring to the boil
Reduce Heat and simmer for 20 minutes (or until potato’s are soft)
Finally, to add even more nutritional value, add Bok Choy to the pot and let cook until Bok Choy is wilted
Finally Serve in a bowl and add Spring Onions to garnish
