10 Minute Vegan Ramen Noodles



Ingredients

  • 1 packet of ramen noodles

  • 1.5 Litres of water

  • 1 chilli

  • Thumb size piece of ginger

  • 2tbs vegetable stock

  • 3-4 cloves of garlic

  • 400g mushroom of choice

  • 4 spring onions

  • 2tbs of tamari (or soy sauce)

  • 1 red capsicum

  • 1 carrot

  • Half a head of red cabbage

  • 120g of bean sprouts

Method

  • Turn on frying pan and sauce pan on high heat

  • Pop garlic, chilli, water, stock, tamari (or soy sauce), in a blender (this is to make the broth), blend well and add to the saucepan

  • Put noodles in the soup saucepan

  • Add mushrooms to the frying pan along with oil and tamari (or soy sauce) – Stir occasionally

  • Finely chop spring onions and the capsicum

  • Grate the carrot and cabbage

  • When noodles are soft add them to a bowl including the broth

  • Pop the chopped vegetables, mushrooms and bean sprouts on top and Enjoy!
