10 Minute Vegan Ramen Noodles

Ingredients
1 packet of ramen noodles
1.5 Litres of water
1 chilli
Thumb size piece of ginger
2tbs vegetable stock
3-4 cloves of garlic
400g mushroom of choice
4 spring onions
2tbs of tamari (or soy sauce)
1 red capsicum
1 carrot
Half a head of red cabbage
120g of bean sprouts
Method
Turn on frying pan and sauce pan on high heat
Pop garlic, chilli, water, stock, tamari (or soy sauce), in a blender (this is to make the broth), blend well and add to the saucepan
Put noodles in the soup saucepan
Add mushrooms to the frying pan along with oil and tamari (or soy sauce) – Stir occasionally
Finely chop spring onions and the capsicum
Grate the carrot and cabbage
When noodles are soft add them to a bowl including the broth
Pop the chopped vegetables, mushrooms and bean sprouts on top and Enjoy!
