Broccoli, Pea & Chilli Curry

Ingredients
Olive Oil
4 Spring Onions
1 red chilli
Thumb size piece of ginger
3 Cloves of garlic
200g peas
1 red capsicum
2 heads of broccoli
Punnet of tomatoes
Handful of bean sprouts
1tsp cumin seeds
1 tin coconut milk (400g)
1 tin diced tomatoes
2tbsp curry powder
1 ½ tsp salt
½ tsp black pepper
1 tbsp maple syrup
Small bunch of coriander
Instructions
Add 2 tbsp oil to the pan on a high heat
Once heated, add your chopped onion, garlic, chilli and spring onions. Cook for 2 minutes
Chop your capsicum into strips, broccoli into florets and tomatoes into quarters and add to pan. Cook for two minutes and add the cumin seeds and bean sprouts while the broccoli starts to char
Pour in the coconut milk and chopped tomatoes with the curry powder, salt, pepper and maple syrup.
Chop in the coriander along with the peas
Simmer for 5 Minutes and Serve
