3 Bean, Corn and Cucumber Salad!

Ingredients
½ red onion
1 large cucumber (of choice)
½ bunch fresh parsley
1 can of chickpeas drain and rinse
1 can of kidney beans drain and rinse
1 can of cannelloni beans drain and rinse
1 can of corn drain and rinse
¼ cup red wine vinegar
Juice of 1 lemon
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon pepper
Method
Thinly slice the red onion and add to a large bowl
Chop cucumber into bite-size pieces and add to the bowl
Finely chop the fresh parsley
Add the chickpeas, kidney beans and cannellini beans to the bowl
In a small bowl combine the red wine vinegar, lemon juice, oregano, salt and pepper and whisk together
Pour the dressing over the salad and mix well
Serve and sprinkle fresh parsley on top and enjoy
